Pumpkin Muffins

I love the fall season because it reminds

me to add pumpkin to many of the dishes I already make.


A can of pumpkin puree costs around $1.20 and 2 oz of it is packed with 230% vitamin A!


Some of my favorite ways to add it into foods include: pancakes, smoothies, chilli, spaghetti sauce, & muffins.


Here is the muffin recipe I've been using this season:



•2 cups Kodiak mix

•3/4 cup low fat milk

•3/4 cup brown sugar

•1/4 cup butter (melted)

•1 banana

•3/4 cup pumpkin purée

•1 egg

•1 tsp vanilla

•1/4 tsp cinnamon & nutmeg


Mix it all together and bake at 350° for 16-18 minutes.


You can even add other ingredients like 1/2 cup of frozen blueberries, walnuts or chocolate chips. They can be used as an easy breakfast or a snack during the day.
